chicken with lime and gingerrating:
This recipe comes from the Tesco GI diet and tastes delicious. You don't need to be on a diet to want to eat it :-)
150g chicken fillet
1 clove garlic
2cm fresh ginger
Juice of half a lime
pinch of ground coriander (or use fresh)
Pinch of sugar
1 tsp soy sauce
100g baby spinach
4 TBS yoghurt
60g basmati rice
Put the garlic, ginger, chilli, lime juice, coriander, sugar and soy sauce into a blender and whiz
Wash and pat dry the chicken and score the surface with a sharp knife.
Spread the marinade over the chicken and leave in the fridge for at least an hour (or prepare the day before)
When ready to cook put the rice on to cook.
Heat a non stick pan to quite a high heat and brown the chicken on both sides. Reduce the heat and our in all the marinade and about 50ml of water
Simmer gently, uncovered for 10-12 minutes or until cooked through and volume of sauce is reduced.
Add 100g baby spinach and stir through to wilt.
Stir in 4 TBS yoghurt and serve on the rice.
The leftovers are delicious cold in a sandwich with avocado.
