lemon and mint couscous salad…

Sounds like a simple, fresh addition to a summer lunch.

serves 1-2

200g/7oz couscous
1 lemon, juice only
handful of fresh mint, chopped
salt and freshly ground black pepper
olive oil, to drizzle
1. Cook the couscous according to packet instructions and then fluff up using a fork.
2. Add the lemon juice, herbs, seasoning and olive oil to the couscous and mix together.
3. Transfer the couscous salad to a serving dish and serve.
