veggie ragu (serves 2-3)rating:
This is a recipie that is a great accompaniment to any meat or fish dish.....low in fat but tastes great too!
You will need:
1 can of chopped tomatoes
half of a red, yellow and green pepper cut into large chunks
1 onion, chopped into chunks
4 mushrooms, sliced
4 broccoli florets, cut into bite sized pieces
4-6 spears of asparagus, cut into inch lengths
1 clove garlic, chopped or crushed
italian herbs (heaped teaspoon)
Gently sweat the onion in a pan until softened, then add everyting else, cover and simmer on a low heat, stirring occasionally for 20 mins. then remove the lid, and allow the ragu to simmer down and thicken. simple and easy!
If you dont have the veg listed, you can use anything you like...its also good with baby sweetcorn, carrots and courgette.
