poached fruit

I often do something like this when we have guests - it goes really well with a good chocolate cake, or a polenta cake. 

again, experiment.

about 90g sugar
flavourings: either long strips of citrus zest; a vanilla pod; lemon grass; cinnamon stick; fresh grated ginger
6 peaches, or 12 plums or whatever

try 1 part sugar to 4 parts water.  Dissolve it over a low heat, and taste for sweetness, and adjust.  Then add flavourings and bring to the boil.

then the fruit - cut them in half, stone them if you can.  Poach for - oh - 15 minutes or so.  Then remove, and boil the syrup down a bit.
