sweet potato chilli

Thanks to Kate Bodley for this one - posted with her permission.  I'm so going to try this!

2 red onions, chopped
1 red pepper, deseeded & chopped
2 cloves garlic, crushed
2 or more sweet potatoes, peeled & chopped
1 carton passata (or a tin of tomatoes)
1 tin kidney beans, rinsed and drained
1 slurp (technical term) orange juice
water
1 tsp paprika
1/2 tsp (or less) hot cayenne pepper

Chuck everything in slow cooker on low, stir well, add enough water to just cover the ingredients, stir again, and cook for 8 hours+. Serve with rice, pitta bread or tortilla chips. 

I liked this because it doesn't need any prior cooking, and it stood up to my 10.5 hour cooking time (that's the length of my working day). It had a lovely smoky flavour from the paprika. Another time, I might add a finely chopped green chilli instead of the cayenne, and maybe a courgette for more bulk - or another sweet potato. But it's pretty good as it is.
