peach cobbler

Peach Cobbler

I made this at someone else's house, in an oven with which I was not familiar. On a non-fan setting it took longer than the 30 minutes the recipe suggested. The result was a tasty, chewy outer layer and soft, delicious inside.

125g butter, melted
1 cup (plus 3TBS) granulated sugar
1 cup all purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup milk
1 tsp vanilla (Raj had a lovely one with seeds in)
3-4 peaches, thinly sliced (we used a large tin of peaches)
1/2 tsp cinnamon

Heat oven to about 180 - 200C

Melt the butter and pour it into a dish of 11x7 inches or similar proportion
In a bowl, mix 1 cup of sugar, 1 cup of flour, the baking powder and the salt and stir to blend.
Stir in 1 cup of milk and the vanilla and mix to form a batter.
Pour the batter over the melted butter.
Toss the peaches with the remaining 3TBS sugar and the cinnamon. Arrange the peaches over the batter.
Bake for 30 minutes (maybe more) until a skewer inserted int he cake comes out clean.

Serve with cream or ice cream.
