50g unsalted butter
150g blanched almonds
3 tbsps icing sugar
garnish: ground cinnamon
prepare couscous according to the packet. Sorry - I *know* this is a cop out, but they're all different. Set aside.
put butter into saucepan and sauté the almonds until golden brown. Remove from the pan and leave to cool, then coarsely grind 2/3 of the almonds in a food processor. Retain the remaining 1/3 for garnish. Stir ground almonds and icing sugar through the warm couscous, and arrange it into a mound. Sprinkle with ground cinnamon and the almonds. Serve immediately with more icing sugar, if you like .. and why not.
