75g flakes almonds
1 tbsp curry powder (I don't own such a thing, so I will improvise)
salt and pepper
2tbsp olive oil
a handful of chopped mint
Cut the courgettes in half lengthways, then slice diagonally into 1cm thick chunks. Place them in a bowl with the almonds, curry powder and a pinch of seasoning, and mix thoroughly.
Heat the olive oil in a large frying pan, add the courgette mixture and coook over a high heat for about 10 minutes, or until tender.
Serve and sprinkle with chopped mint.
