french beans and courgette salad
rating:I made this when I suddenly discivered I had dozens of people to feed for supper, and nothing but a baked gammon and some spuds.
I made some other salads too, but they weren't anything special - this was; worked very well indeed.
I've also discovered that it is delicious served hot, with some couscous, for a light supper.
2 packs of green beans (maybe 250g ish?)
1 medium courgette
tamari
black mustard seeds
olive oil
medium finely chopped onion
some (lots?) finely chopped garlic
whole grain mustard (or any other sort) if you like
As always, the ingredients and quantities are just a guideline.
Top and tail the beans, and cut the courgette into thin strips, and boil for 4 minutes. Drain, and plunge into cold water.
Sauté the onion and garlic gently in the olive oil *in a large pan* until soft. Hurl in a reasonable quantity of black mustard seeds - I used about 1 tbsp's worth.
Add beans and courgette, and stir well (now you see why I said a large pan), and add tamari sauce and mustard until you like the texture and taste.
