lima beans with chilli and sunflower seedsrating:
1 tbsp sunflower oil
1 medium onion, finely chopped
50g sunflour seeds, roasted
1 tbsp jalapeno chilli, chopped
1 large tomato, roughly chopped
1 x 400g tin of lima or butter beans, drained (go on - soak dried ones overnight and boil till tender - much nicer)
salt and black pepper
1 tbsp fresh coriander leaves, chopped
heat oil, cook onion gently for 10 minutes without colouring. Stir in sunflower seeds, tomato, chilli and beans. Taste for seasoning. Cook gently for 2 mins, stir in chopped coriander.
serve with meat, or fish, or just on their own.
