chilli beef and black bean sauce

  • 600g beef steak (rump, fillet, sirloin or striploin), thinly sliced into 5cm slivers
  • 1 tbsp dark soy
  • 1 tbsp groundnut oil
  • 1 medium bell pepper (any colour), sliced
  • 2 red jalapeno chillies, chopped
  • 10 tbsp black bean sauce

Mix the soy and oil together and marinate the beef with it. Refridgerate for 30 minutes.

When the meat has marinated, throw some oil into a wok at high heat and wait for it to smoke. Now add the pepper and chillies and stirfry for 30 seconds. Now add the beef and continue to stir-fry for another 2 minutes. Keep the beef moving at all times so if does not stick or harden. Add the black bean sauce, bring to the boil and serve straight away. It does not matter if the beef is still a little red when you remove it from the heat because it will continue to cook after you remove it from the heat.

Serve with rice.
