crème de mûre, cassis, etc

Put 700 grammes of soft fruit - a bit more than 700 grammes for blackberries
(Soft fruit = blackberries, blackcurrents, raspberries, etc)
into 1 litre of red wine. Leave to macerate for 24 hours then pass through cheesecloth.
Add 1 kilogram of sugar for each litre of liquid obtained, boil for 5 minutes, then leave to cool.
Add ¼ litre of 'alchohol-for-fruit' (obtainable in most Fench supermarkets) per litre of juice. This should work out at 15° to 20°
