This usually will fill a large frying pan and was enough to feed my family of 5.
firstly,make sure all veg and meat is cooked,can either be fresh or leftovers from the day before -perfect to do on a monday using sundays leftovers.
shred the meat into small pieces and put to the side.soften the red onion in a frying pan with a large knob of butter,whisk the eggs throughly then add to the onion and butter keeping mixture in the frying pan,at this point add all the meat and veg making sure it sinks into the egg.Fry on a medium heat for a few minutes then pop under the grill to finish it off..top with grated cheese.GORGEOUS,HEALTHY AND QUICK.
