tangy onion chutneyrating:
8 red onions or same weight of shallots
large knob of Butter
100g caster sugar
100ml red wine
100ml red wine vinegar
salt + pepper
Peel and thinly slice the onions, put into a saucepan with the butter. Soften the onions slightly without colour.
Then add the sugar and cook for a minute. Then add the wine and vinegar and turn the heat up. Cook until reduced and slightly sticky but still with some liquid. Season to taste.
Great with sausages or cheese :)
