fruit cobbler cakerating:
4oz caster sugar
2 beaten eggs
4oz self raising flour
handful of blackberries, raspberries, blackcurrents and chopped apple
tsp of icing sugar
custard or whipped cream for serving.
Cream the butter and sugar together with the back of a wooden spoon or electric whisk.
Beat in the eggs until smooth, then stir in the flour until mixture is even and creamy.
Spoon half of the mixture into a greased 8 inch cake tin which has been sprinkled with sugar.
Add the fruit in an even layer then spoon on the rest of the mixture.
Bake at 180c for 25-35 minutes until browned and firm to touch on top.
Once bake turn on to a wire rack and leave to cool for 5-10 mins, then sprinkle with icing sugar.
Serve with custard or whipped cream and fruit, enjoy!
