Yes, I know - we don't really need another Yes Another Pasta-based Recipe, but this was really nice, so I wanted to note it for myself.

serves 2 fairly greedy folk

Chop one onion and however much garlic you fancy - I did about 4 cloves.  Sauté in some olive oil.  Slice a courgette and add to the onions.  Stick some pasta on to boil - we used conchiglie.

Add to the onion/courgette mix some dried red pepper flakes (or chilli flakes), a can of tomatoes, some balsamic vinegar, and I slooshed out the tomato can with 1/4 glass of red wine.  Simmer this down until the pasta is ready.

Combine pasta and sauce, and add chopped flatleaf parsley.  Pour into an ovenproof dish.  Dot with a chopped mozzarella.  Bake at gas 6 for about 20 minutes.

Delicious!
