red pepper salsa…

From Channel Five's 'Cooking The Books'. I thought it looked interesting enough to make a note of to try some time soon.

1 red pepper, halved and deseeded
2 tomatoes, halves and deseeded
1 lemon
2 tablespoons extra-virgin olive oil
Handful of basil leaves
2 tablespoons finely snipped chives

  1. Cut the pepper and tomatoes into smallish dice.
  2. Cut both ends off the lemon and sit it upright on a chopping board. Cut the rind and pith from it. Cut the flesh into dice, discarding any pips, and mix with the tomatoes, pepper and olive oil.
  3. Season the mixture, then mix in the basil and chives.
