raspberry sorbet

Chop an unwaxed lemon: zap it in the food processer.

Add 350 grams castor sugar. Zap until amalgamated. Remove.

Zap 800 grams raspberries in processor, add to sugar/lemon.

Add juice of two lemons. Sieve, and freeze.

The combination of lemon with raspberries gives an amazing depth of flavour.
