french onion tart

100g butter
200g plain flour
pinch of salt
for filling:
1kg onions
50g butter
1 tbsp olive/sunflower oil
3 egg yokes
200ml double cream
100g gruyere cheese, grated
nutmeg
rub together pastry ingredients with just enough cold water to bring the mixture together. Line a 20-23 cm tart tin with the mixture, line with greaseproof paper, pile baking beans on the top, then bake it blind for 15 mins at 200C.
remove paper and beans and bake for another 5 mins.
heat butter and oil in a large pan, adding finely sliced onions. Cook gently, stirring regularly until tender. Beat egg yolks with cream, combine with onions and cheese, spreading the mixture into the pastry case.
cook at 190C for 1/2 hour.
