rhubarb and orange muffins
rating:150g self-raising flour
125g caster sugar
1/2 tsp cinnamon
4 stalks of rhubarb
1 egg
100ml milk
50g softened butter
grated zest of 1/2 orange
Demerara sugar
Pre-heat oven to 200C and grease a 6-hole muffin tin. Finely dice the rhubarb. Mix together flour, sugar and cinnamon. Finely dice the rhubarb and add it to the flour mix. In a separate bowl, beat together the egg, milk and butter. Add the egg mixture to the flour mixture and stir together well. Spoon into the muffin tin. Sprinkle the tops with demerara sugar. Bake for 25 mins.
