1 small onion, finely chopped
3 cloves garlic, finely chopped
1 tin plum tomatoes
pinch chilli powder
1 tbsp smoked paprika
coarse salt and freshly ground black pepper
750g/1lb10oz potatoes, cut into chunks
olive oil for frying
heat a little olive oil in a pan and gently fry the onions and garlic until soft. Drain the tomatoes, remove the core and as many seeds as possible and roughly chop. Add the chilli and paprika to the pan and cook briefly before adding the tomatoes. Season and continue to cook gently until you have a thick, rich sauce.
heat enough oil to shallow fry the potato chunks. Fry until they are crisp and golden on all sides. Remove, drain on kitchen paper, sprinkle with salt and serve with the sauce.
