courgette chocolate cake

Thanks to Charles Pearmain for this one.

6 oz good plain chocolate
2 eggs
6 fl oz vegetable oil
8 oz courgettes
7 oz plain flour
4 oz caster sugar
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 tsp salt

filling
5 oz good plain chocolate
5 oz soured cream

Method:

Peel the courgettes and grate them finely. Melt the chocolate gently.

Sift together the flour, baking powder, bicarbonate of soda and salt, then add the caster sugar.

Add the grated courgettes to the melted chocolate and stir them together.  Beat the eggs in a bowl and add the oil slowly,  then add this to the chocolate mixture, stirring gently.

Fold the mixture into the dry ingredients (I wonder if it would be better to sift and fold the dry ingredients into the mixture?)

Pour into two greased 8" tins and bake in a fan oven set to 150 deg C. for 20-25 minutes.

Filling:

Melt the chocolate without over-heating. Add the soured cream and mix together. Leave to cool and then spread on the cake when cool and sandwich together.
