Steam or boil a pound of new potatoes until just cooked.
Press several slivers of flaked almond into the potatoes, leaving 3mm or so sticking out.
Heat 2tbs oil in a pan, add 1.5tsp cumin seed and stir until they pop.
Then add 2tbsp ground coriander, 1tbsp dried mint (or some fresh if you have it), 1tsp salt and 0.5tsp chili powder and stir for a few seconds.
Add the potatoes and stir about gently for a few minutes until coated with the crisped spices.
Eat hot or cold.
