brazilian black bean soup

2 cups dried black beans, soaked
4 cups water
1 tbsp olive oil
3 cups chopped onion
10 cloves garlic, crushed
2 tsp cumin
2 tsp salt
1 medium carrot, diced
1 medium pepper, diced
1 1/2 cups orange juice
black pepper to taste
cayenne to taste
2 medium tomatoes, diced (optional)

optional garnish:
sour cream, coriander, salsa

place soaked beans in a large pan with 4 cups of water.  Cover, and simmer till tender (about 1 1/4 hours).

heat olive oil in medium sized frying pan.  Add onion, half the garlic, cumin, salt and carrot. Sauté over medium heat until the carrot is just tender. Add remaining garlic and the pepper.  Sauté until everything is very tender (another 10 - 15 mins). Add vegetable mixture to the beans, scraping in every last morsel.

stir in orange juice, black pepper, cayenne, optional tomatoes.  Purée some, or all, of the soup,. and return to pot.  Simmer over very low heat for 10 - 15 minutes more.  Top with garnish if required.
