mojo sauce (picon version)

  • 6 fl oz olive oil
  • .5 whole garlic
  • 2 red chillies
  • 2 tbsp fresh coriander
  • 1 tsp ground chilli
  • salt
  • pepper
  • lemon juice
  • vinegar
  • water (if needed)
Put oil, garlic, chillies, chilli powder, coriander, salt, pepper, vinegar and lemon juice in a bowl. Liquidise - taste. Add more garlic and chilli to suit taste. Add water if the mix gets too thick. (more chilli = Mojo Picante). There is a Sauve version of this which uses cream instead of olive oil and Verde which uses green chillies instead of red. Pour on anything (espescially Papas Arrugadas).
