savory bread and butter puddingrating:
2 oz butter
1 bunch of spring onions
6 slices of whitw bread, crusts removed
6 oz mature cheddar cheese grated
1/4 pint milk
salt and pepper
fresh parsley to garnish
Grease a 1.5 litre/2 1/2 pint baking dish with a little of the butter, Melt the remaining butter in a small saucepan and fry the spring onions, until golden.
Cut bread into triangles and layer half of them into the baking dish. Top with spring onions and half the cheese.
Beat together the eggs and milk and season with salt and pepper. Layer the remaining triangles of bread in the dish and pour over the milk m ixture and leave to soak for 15 - 20 minutes.
Sprinkle the remaining cheese over the soaked bread pudding. Bake in a preheated oven at 190c/375f/gas mark 5 for 35 - 40 minutes until puffed up un golden brown. Garnish with parsley and serve a once.
(Variations. add 2 oz chopped cooked ham to the spring onions, when layering them in the baking dish.
use 1 large onion instead of spring onions if preferred.
