chocolate and coconut cake

Piotr Chlapowski's recipe

chocolate layer:
200g dark chocolate or cocoa or mixture of both
100g caster sugar
200g unsalted butter
2-3 tablespoons vodka or some lesser spirit (amount to taste)

coconut layer:
200g coconut (mixture of two-thirds creamed and one third desiccated)
100g caster sugar
200g unsalted butter
1-2 tablespoons milk

Icing (to be made later):
icing sugar
lemon vodka or vodka and fresh lemon juice
water if necessary

3 large round wafers (about 200mm diameter)

chocolate layer:  mix softened butter with sugar until creamy;  add vodka and melted chocolate to achieve a further dense consistency;  spread over a wafer and cover with another, pressing slightly.

coconut layer:  melt butter and creamed coconut;  add desiccated coconut and milk.  Simmer slowly for five minutes, stirring continuously until all butter has been absorbed and the mixture is soft but dense.  Add more desiccated coconut if the butter separates and runs loose.  Let mixture cool for ten minutes and then spread over the chocolate layer and cover with the last wafer.

leave in a cool place until it is well set (preferably overnight).

icing:  mix cocoa, icing sugar and lemon vodka (plus water if necessary).  Spread mixture over top and sides of cake.
